37-year-old Adomah joined the Saddlers on a free transfer from Queens Park Rangers last summer and went on to make 54 first-team appearances, scoring five goals.
Speaking following the news of his new deal, Albert said: "I'm really pleased to be staying with the Saddlers for another season.
"Unfortunately, last season didn't finish with the moment that we all wanted it to, but I really enjoyed my time here, and it was an easy decision for me to decide to stay here for another year.
"Conversations with the gaffer have been happening for a few weeks now, and it really was an easy decision in the end.
"I feel really loved here by the supporters and I want to keep playing as much as I possibly can and helping the team wherever I can as well.
"It's time to get back to work now for another pre-season, and I just can't wait to get going again."
